Pancakes with Rhubarb and Strawberry Compote

Pancakes with Rhubarb Compote

Pancakes

  • 3 bananas
  • 2 eggs
  • ½ cup almond flour
  • 2 tsp ground cinnamon
  • 1 tsp vanilla
  • 1 tbsp coconut oil
  • dash sea salt

Rhubarb and Strawberry Compote

  • 2 stalks rhubarb, chopped
  • 6 strawberries, chopped
  • 1 tbsp Maple syrup
  • 1 lemon – zest and juice

Banana Pancakes

  • 1 banana
  •  2 eggs
  • 1 cup mixed berries
  • 1 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp coconut oil

Red Cabbage and Zucchini Pancakes

  • 2 small zucchinis
  • 1 cup shredded red cabbage
  • 2 small spring onions
  • 4 large eggs
  • 2 cloves garlic
  • 2 tbsp coconut oil
  • 2 tsp dried marjoram
  • ½ tsp pink Himalayan salt or sea salt

To garnish: 

  • 2 lemon wedges

These delicious pancakes are a low-carb interpretation of a classic Japanese dish, okonomiyaki. Delicious and healthy!

  • 1 tsp vanilla extract

To garnish: 

  • 2 tbsp of Ricotta
  • 1 handful of blueberries

Easy Buckwheat Pancakes

  • 1 cup buckwheat flour
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1¾ cups buttermilk
  • ¼ cup melted butter
  • 1 tsp vanilla extract
  • Butter or oil for cooking
